Instead of having set rules, I suggest altering them every once in a while, it would make the event less monotonous and let players try out different strategies.
What I mean by that: they could change let's say, depending on days of the week. Example:
-Monday could be 3vs3 no items, no ress. in pvp2 map.
-Tuesday could be 4vs4vs4vs4 with 20pots limit, no skills restriction on a larger, battleground-like map.
-Wednesday could be 1vs1, no priest, no items, best out of 3. in pvp4 map.
Etc.
This doesn't mean holding it every day, but depending on which day it falls on it would follow the rules of that day.
You could also hold special fights once in a while to spice it up even more, e.g. "You think you're the best tank on the server? Come prove it and try to stay alive the longest agaisnt 3 (or 4, or 5) players at once!"
I also like the idea of scoreboards that Ellie brought up, considering it's pretty much always the same bunch of people that you see in PVP, I expect it to be the same for this kind of events thus it wouldn't be too hard to keep track of everyone.
Ultimately, having a GM to assist (at least once in a while) would be great. I know GMs here aren't fan of PVP, but since it's player-ran all they would have to do is broadcast it, look out for cheaters/troublemakers, some recalls here and there and boosting up the prices a little to push people to participate.
