Strawberry Banana Muffins

How does this recipe works without eggs for the fluffiness?
Baking Soda. It is truely a great key.
Want it fluffier? add just a tiny bit of vinegar then, the chemical reaction will create air pockets into the batter as it bake.
Or simply add eggs...

????1/2 cup Melted Butter
????1/2 cup Yogurt (Instead of 2 Eggs)
????1 teaspoon Vanilla Extract
????1 cup Mashed Bananas (About 2 Large Size)
????1 cup Chopped Strawberries
????2 and 1/4 cups All Purpose Flour
????3/4 cup Light Brown Sugar
????1 and 1/2 teaspoon Baking Powder
????1/4 teaspoon Baking Soda
????1/2 teaspoon Cinnamon

Note: You only need like approx. 5 Strawberries, or 7 Strawberries (if they are homegrown and all very small). If you are a big fruit eater like me, I added like 10-15 strawberries (but that is me over doing it).

The first time around:
It is pretty good but my roommate found it too plain. I have a delicate taste so I was fine with it by default.
I decided to glazed some honey and water mixture on top of it for my roommate and made a crispy crumble like topping with brown sugar and flour for him when I baked the rest of the batter.

Today was my 2nd time using this recipe:
I changed it up a bit.
Since I am lactose intolerance, I replaced the butter with a little of soy milk (American soy milk) and a little bit of oil! My soy milk was vanilla favor, so I reduce the vanilla extract by half. (It made it slightly more dense but just slightly, next time I will add more baking powder by a pinch)

This time, instead of increasing the sugar, I added honey into the batter. About 1/4 cup of honey. Hmm, made the muffins already sweet and smelled more homely country like smell.

I love spices, so I decided to add some nutmeg 1/4 teaspoon.
A little of ginger powder also, 1/4 teaspoon.
Hmm~ Made it smell so nice and taste a little kick.

This is optional but it made a wonderful aroma~! I place single rosemary piece on top of each muffin. Fresh rosemary. Not dried.
Pluck off the rosemary before eating though.
(Note: I tested one with thyme, almost the same difference but rosemary usually have a stronger smell compare to thyme)

I used frozen banana and strawberries this time. Maybe that also cause that slight density. It was still light and fluffy none the less.

Icon_biggrin I am really into alternative baking as in no eggs, no milk or whatever. It is nice for people who are on a diet??or caution of what they are eating, so they can eat it~ I like sharing my baking goods to people <3

Har har~ I am abusing this forum and other few forums, so I can find how I wanna format my writing before I make a blog (someday)~
