What's for dinner~

Here is a thread of what you are going be cooking/baking~
And sharing recipes, tips and tricks and meal ideas.

Stating instant noodles, a day will make me cry

Today on my menu is~

Siew Yuk! (Cripsy Pork Belly) You can usually buy this at Chinese BBQ stores.

It is really good, I love pork belly (other known pork belly food; BACON! (this is not bacon recipe...)), the fat makes it so flavorful! The crispiness is made by the oven! Not by deep frying.
~I made it last week but a friend of mine and my roommate request it again!


Serve with rice and other vegetables. <3 Or pop it in you Ramen!

This is the original recipe here.

How does this recipe works without eggs for the fluffiness?
Baking Soda. It is truely a great key.
Want it fluffier? add just a tiny bit of vinegar then, the chemical reaction will create air pockets into the batter as it bake.
Or simply add eggs...

????1/2 cup Melted Butter
????1/2 cup Yogurt (Instead of 2 Eggs)
????1 teaspoon Vanilla Extract
????1 cup Mashed Bananas (About 2 Large Size)
????1 cup Chopped Strawberries
????2 and 1/4 cups All Purpose Flour
????3/4 cup Light Brown Sugar
????1 and 1/2 teaspoon Baking Powder
????1/4 teaspoon Baking Soda
????1/2 teaspoon Cinnamon

Note: You only need like approx. 5 Strawberries, or 7 Strawberries (if they are homegrown and all very small). If you are a big fruit eater like me, I added like 10-15 strawberries (but that is me over doing it).

The first time around:
It is pretty good but my roommate found it too plain. I have a delicate taste so I was fine with it by default.
I decided to glazed some honey and water mixture on top of it for my roommate and made a crispy crumble like topping with brown sugar and flour for him when I baked the rest of the batter.

Today was my 2nd time using this recipe:
I changed it up a bit.
Since I am lactose intolerance, I replaced the butter with a little of soy milk (American soy milk) and a little bit of oil! My soy milk was vanilla favor, so I reduce the vanilla extract by half. (It made it slightly more dense but just slightly, next time I will add more baking powder by a pinch)

This time, instead of increasing the sugar, I added honey into the batter. About 1/4 cup of honey. Hmm, made the muffins already sweet and smelled more homely country like smell.

I love spices, so I decided to add some nutmeg 1/4 teaspoon.
A little of ginger powder also, 1/4 teaspoon.
Hmm~ Made it smell so nice and taste a little kick.

This is optional but it made a wonderful aroma~! I place single rosemary piece on top of each muffin. Fresh rosemary. Not dried.
Pluck off the rosemary before eating though.
(Note: I tested one with thyme, almost the same difference but rosemary usually have a stronger smell compare to thyme)

I used frozen banana and strawberries this time. Maybe that also cause that slight density. It was still light and fluffy none the less.

Icon_biggrin I am really into alternative baking as in no eggs, no milk or whatever. It is nice for people who are on a diet??or caution of what they are eating, so they can eat it~ I like sharing my baking goods to people <3

Next Food for today's dinner is:

Shepherd's Pie (Also known as Cottage pie) Recipe
It is a savory meaty pie that normally doesn't hold a crust.
The structure of it is a layer meat (usually something ground or minced) , with a layer of (mashed) potato + another layer of other vegetables (like corn).
Like a casserole (I never had one but I know of it).
According to wiki, it is an Irish and British cuisine.

Note: I provide a very basic and simple pie recipe! I did research a few pie recipe and spun one into my own!

I never made one, I had it once only but I don't remember how I felt about.
Decided something cook something less Asian for my roommate, I am sure he is sick of rice + whatever I make.
And I felt lazy!

I felt like this was a very simple food and very filling.
Can easily made with simple ingredients. Prep time takes a while though due to making mashed potatoes!

What I used:
Ground beef
Olive Oil
Carrot
Onion
Corn
Garlic [minced]
Salt/Pepper
Worcestershire Sauce (can be omitted)
Tomato
Chicken Stock [Other stock works, preferably meat stock]

Bread crumbs
Butter

Potato
Milk
salt/pepper
egg
Cheese!! (optional)

Sorry, I wish I can provide you the measurement, I usually just mix things together until it seem or taste correct.

As you noticed I use a tomato, I crushed the tomato and add a splash of water (or a little of wine!) and boil it with the cooked beef to give it some yummy flavor along with the vegetables. And then add the broth last.

~~Worcestershire sauce add the flavor of it so well! There is no replacement for that!

I added bread crumbs, I read some recipe sprinkle a little of bread crumb on top but I decided to make a little crust for my pie at the bottom.
Using soften butter or melted on the bread crumbs, mix well and line it to the baking dish. Freeze for about 20-30min or until it is pretty well solid. Then you can place the filling inside (make sure the filling is not hot!). I made a very very very thin layer (like 1cm or smaller layer).

If you never really made mashed potato you should look up simple recipe for it. I usually add a little bit of milk or/and cream and 1 egg to it to make it soft and fluffy.

Cheese was the best part for me! OH gosh, I love cheese so much, I sprinkle a little on top midway cooking and also mixed it with the mashed potato! After that I even sprinkled it more on top when serving.

Next time, I will try to make a Vegetarian version of this someday.

I made a pasta with cheddar cheese, sliced carrots, and tuna all mixed in together.

No pictures, but it turned out fantastic. =)

Hmmz yummy, Like mac and cheese =D?
I love mac and cheese with tuna.

I remember my brother didn't like carrot as much so I would puree it into the pasta sauce~ It made paste sauce slightly sweeter but adding splash of red wine makes is pretty tangy again.

Today i had Macaroni made by Alex, he accidentally threw in some speculaas spices instead of kerry spices hahaha, it was eatable though but it smelled to much like peper/kruidnoten xD
